Peanut

1.The crop and the myth
The peanut is a legume crop, likely originating in South America and carried into the Atlantic world through colonial trade, that became central to Southern agriculture in the late nineteenth and early twentieth centuries. It grows underground, enriches the soil with nitrogen, and tolerates heat and poor conditions that defeated many other crops.
In schoolbooks and popular retellings, the peanut is often attached to a single claim: that George Washington Carver “invented peanut butter.” Carver never made that claim, and the archive does not defend it. Commercial peanut pastes and butters were being produced in North America before his major peanut work, and Carver’s own bulletins and talks focus instead on peanut pastes as one among many preparations rather than a singular invention.
The myth matters because it shrinks Carver’s contribution into a single product and then gets even that product wrong. What he did with the peanut—and with Southern soil more broadly—is more ambitious than a spread on bread.
2.Carver’s real achievement: soil science and crop rotation
By the time Carver took up his post at Tuskegee Institute’s agricultural program in the 1890s, cotton monoculture had stripped Southern soils of nutrients and trapped Black farmers in cycles of debt and dependence. Carver used his training in botany and chemistry to show that legumes like peanuts could restore nitrogen to the soil, diversify what farmers planted, and open new markets beyond cotton.
Through bulletins, traveling demonstration wagons, and direct instruction to Black farmers, he advocated a rotation system: plant cotton, then follow with peanuts, sweet potatoes, or other legumes, building soil instead of exhausting it. This was not abstract theory; it was a practical program designed for people with little capital, little margin for error, and often hostile local credit and market systems. His advice linked plant choice, soil health, and economic strategy in a single package.
Southern landowners and Black tenant farmers adopted peanuts as part of this rotation, reshaping fields that had been devoted almost entirely to cotton. This shift, multiplied across counties and states, is what historians describe as Carver “helping save Southern agriculture”: not by inventing a single product, but by authoring a sustainable system centered on crops like the peanut.
3.Hundreds of peanut uses: food, medicine, and industry
Once the peanut was in the field, Carver worked to ensure it could find uses beyond raw sale in a commodity market. At Tuskegee he developed and catalogued hundreds of peanut-based products across food, medicinal, cosmetic, and industrial categories. Contemporary summaries of his work describe more than 300 distinct uses drawn from his bulletins and experiments: peanut milks and sauces; cooking and salad oils; flours and meals; candies and brittles; coffee substitutes; and savory preparations that could stretch household budgets.
He also pursued non-food uses intended to create small-scale manufacturing opportunities: peanuts became sources for dyes and stains, soaps, face powders, shaving cream, adhesives, axle grease, and even early plastics. When he presented this work to agricultural conferences and government officials, his aim was clear: to turn the peanut into a versatile resource so that farmers who followed his cropping system would have real markets and value, not just a theoretical improvement in soil.
These peanut derivatives did not all become mass-market products, and patent credit was not how Carver measured success. His institutions and audiences were Black farmers, Black schools, and Southern communities, and his work sat mostly in bulletins, local demonstrations, and regional networks rather than corporate portfolios.
4.Peanut butter and the politics of credit
Peanut butter itself sits at an intersection of industrial food processing and Black agricultural knowledge. Earlier nineteenth-century physicians and food reformers experimented with nut pastes as protein sources, and commercial processors began selling peanut butter in the decades around Carver’s early career. Carver’s bulletins describe “peanut paste” and similar preparations, but he did not frame them as a new invention, nor seek a patent or trademark.
The official record that says “Carver did not invent peanut butter” is correct on the narrow point, but it also reveals a pattern: Black scientists and farmers shape the conditions that make a product viable, while later industrial credit flows to manufacturers, corporate brands, and white-owned capital. The archive names that pattern without overclaiming. In this case, Carver’s contribution is the agronomic and economic foundation that makes peanuts abundant and valuable; factory peanut butter rides on that foundation.
In that light, insisting on the false credit of “peanut butter inventor” would minimize Carver’s stature. The stronger, truer claim is that his peanut work was part of a holistic program: rebuilding soil, teaching farmers, diversifying Southern diets, and opening non-cotton futures in the rural Black South.
5.The peanut in Black and Southern foodways
Beyond laboratories and bulletins, peanuts rooted themselves in the everyday life of Black and Southern communities. Peanuts became snacks sold at church gatherings, fairs, and on street corners; peanut brittle and peanut pies entered dessert tables; boiled peanuts joined the repertoire of roadside and home cooking, especially in the Deep South.
For Black farmers, peanuts offered both saleable harvests and by-products like peanut hay for livestock, knitting plant and animal economies together. For Black households, peanut-based dishes stretched protein across seasons and budgets. Carver’s emphasis on home-scale processing—roasting, grinding, oil extraction—aligned with this world, where capital for large machinery was scarce but knowledge and labor were rich.
The archive therefore holds the peanut not just as an agricultural commodity but as a foodway: a plant that tied science, land, and kitchen into a single story. When Southern soil science turned toward regeneration, the peanut was one of its main instruments, and Black communities were both the authors and beneficiaries of that shift.

Carver’s refusal to claim the false credit of “inventing peanut butter” is part of that stature: he insisted that his real work was broader, systemic, and communal, and the archive adopts that frame.
